One of your main expenses, when you are travelling around Australia, will be food. We like to eat well and we cook almost everything we eat from scratch. But one thing we really hate is letting anything go to waste. We always seem to come up with a way to use every last bit of food we have with us. And that includes my Easy 2-Minute Noodle Frittata.
It doesn’t matter what brand of 2-Minute noodles you have, you just make them up with boiling water, but leave any of the flavour sachets out. When they are soft, spread them out in the bottom of the dish and they become the base of your frittata.
Here’s what I put in my most recent one but you can use absolutely anything you want to use up. I had two leftover sausages but you could use cooked chicken or roast lamb, roast vegies etc.
This is just one of the ways we try to save money on food.
INGREDIENTS
- 1 packet 2-minute noodles
- 2 cooked sausages, sliced into small pieces
- 1/2 brown onion, sliced
- 4 pieces short cut bacon, diced
- 1/2 cup grated cheese
- 1/2 cup frozen corn
- 6 eggs
- splash of milk
- black pepper to taste
METHOD
- Fry onion and bacon together until soft.
- Cook 2-min noodles in boiling water for 2 minutes!
- Spread noodles over the base of a pan, along with corn
- Spread sausage over top and sprinkle with bacon and onion mix
- Sprinkle grated cheese over the top
- Whisk eggs together with black pepper and a splash of milk
- Poor egg mixture over the top
- Bake in oven for around 20 minutes or until egg mixture has set
This cooks perfectly in our Weber Baby Q and if you use the Weber pans it doesn’t stick either.
Can be eaten as a main meal on its own or with some salad or steamed veg or as a quick lunch whilst on the road. ENJOY!
