If you think camping food is all sausages and baked beans then think again! Whenever we go camping I still like to eat well and have a nice variety of foods to eat but I also like to keep our meals simple and quick to prepare. That’s why I love these fresh Chicken and Veg Kebabs that I make.
They are super easy and quick to prepare and there are never any left overs! As an added bonus they are pretty healthy too!
If you are a super organised camper you can prepare the chicken at home before you leave. All you need to do is pop the whole lot in a zip lock bag and freeze it or if you happen to have a vacuum sealer you can use that.
CHICKEN AND VEG KEBABS
2 – 3 large chicken breasts
Your choice of vegies such as :-
- mushrooms
- red onion
- capsicum
- zucchini/baby squash
- thin slices of sweet potato
1 bottle of marinade of your choice ( I use Masterfoods Honey, Soy and Garlic or you could make your own)
Kebab skewers – if using bamboo ones make sure you soak them in water first so the end don’t burn when you cook them.
Cut chicken into approx. 2cm chunks and marinate for about 2 hours.
Dice your chosen vegies into similar sized chunks
Thread onto skewers alternating the chicken with the veg.
Cook on a BBQ plate for 10 to 15 minutes.
Serve with salad or jacket potatoes – cooked in the fire of course!
