We are always looking for something different to cook for dinner. We enjoy cooking and mainly cook simple dishes using only one or two pans. As we don’t have an oven in our van, nearly everything we cook is done on our Weber Baby Q.
These Cheese and Curry Rissoles were quick and easy to make. As a bonus, they cost less than $10.00 in ingredients, as I had everything I needed except for the meat and vegetables.
CHEESE AND CURRY RISSOLES
INGREDIENTS
- 500 grams of lean beef mince
- half a brown onion, finely diced
- small carrot, grated
- small zucchini, grated
- 1/3 cup grated cheddar cheese (I had some leftover pizza cheese)
- 1/3 cup bread crumbs
- 1 to 2 teaspoons curry powder
- 2 tablespoons tomato sauce
- pepper to taste
- 1 egg, lightly beaten


METHOD
Combine all the ingredients and mix well by hand. When well combined, shape handfuls of the mixture into rissoles.
Place a piece of baking paper on a plate and refrigerate for at least an hour before cooking. Cook in the pan in Weber or on a BBQ plate.


Serve with your choice of veggies.
The mixture will make between 9 and 11 rissoles.
If you don’t want to cook all the rissoles, they can be frozen for another day.
If you don’t fancy rissoles, the mixture can be made into meatballs, hamburger patties, sausage rolls, or even meatloaf.
