Zucchini Slice in the Weber Baby Q

Something I had been wanting to try in the Weber Baby Q for a while was a Zucchini Slice whilst we were camping. It’s one of my favourite things to make, and it’s so easy and tasty. It’s great to serve with salad and just about any meat. It also makes a great snack when it’s cold. It can also be frozen—that is, if there is any left!

We elected not to put an oven in our caravan, so our Weber Baby Q cooks 90% of our meals. Brenden generally does most of the cooking, but while we have been stopped for work, he has had a few late finishes. So, the cooking duties have fallen more to me.

I must admit I was a bit nervous using the Weber on my own. I wasn’t sure if I would be able to get the connections plugged in properly. Would I get the temperature right? Would I end up burning something? Well, I’m happy to report that I haven’t burnt anything, so I must be doing something right!

Simple Lunch

The recipe I use is the same one my Mum always made, so I’m not sure where it originated.


Zucchini Slice – Ingredients

Zucchini Slice - Ingredients
  • 6 eggs
  • 1 cup self-raising flour
  • 1 large zucchini, grated (or 2 medium)
  • medium brown onion, finely diced
  • 6 slices shortcut bacon, diced
  • cup grated tasty cheese
  • 1/4 cup vegetable oil ( I use Rice Bran Oil)
  • 1/4 cup cream
  • ground black pepper to taste.

METHOD

Zucchini Slice - Mixture

Whisk the eggs with a fork until broken up. Then, gently combine with all the other ingredients.

Spread into a baking dish suitable for use in a Weber Baby Q. Bake at about 150` for 40 minutes or until the top is golden brown. Enjoy!

Serve with a salad for a quick meal. Or eat the zucchini slice as a snack.

  1. It is the same as the one my Mum taught me – Our Mums must have read the same books!!
    Over the years I have modified things depending on what I have had on hand at the time. Have added onion, carrot, mushies even tomato once or twice. the kids like the version with onion and mushrooms best so that is more often than not the way it gets made. Such a versatile dish – breakfast, lunch or dinner, hot or cold, main meal or side dish.

  2. You’ve just reminded me of how long it’s been since I’ve done Zucchini Slice. We all love it and it’s so quick and easy. I love our Weber Fry Pan as well. We use it for most cooking (even on the stove top).

    • We’ve got a small and large fry pan and our kids got us the casserole dish as well. Can’t wait to try out some more ideas.
