When we were finalising the plans for our NextGen Caravan, one of the things I decided not to include was an oven. We bought a Weber Baby Q about 18 months ago. So far I haven’t found anything that I would normally cook in an oven, that I haven’t been able to cook in the Weber.
My latest success were these Cornmeal Muffins. They are fantastic to have for morning or afternoon teas. They freeze well and can be eaten cold or warm them up a little and add some butter.
Below is the recipe, which is DOWNLOADABLE, so you can save it to your phone or laptop. We also made a video so you can see how well they turned out.
1 1/2 cups self raising flour
1 cup cornmeal (polenta)
pinch of salt (optional)
1/4 cup sugar
2 eggs, lightly beaten
1/4 cup oil
small tin creamed corn (300 gram)
1/3 cup grated tasty cheese
3/4 cup milk
Pre-heat your Weber (or oven) to about 190`. In a large bowl add all dry ingredients and stir to combine. Then add all wet ingredients and stir until just combined in together.
Give muffin cases a light spray with some cooking oil and then drop a heaped tablespoon of mixture into each case.
Bake in your oven for around 10-15 minutes. A skewer should come out clean if they are cooked.
I love having something to have with a cuppa or even to share with our neighbours when we are stopped somewhere. And of course, if you have kids, they will love them to.
